This tiny cuvee is the fruit of a parcel of just under 40 ares, one of the oldest Chardonnay plots in Limoux. Hand-picked with meticulous care, this Chardonnay is pampered on entering the winery. The grapes are handled carefully and subjected to strict selection. Only the finest bunches are pressed, gently, to obtain aromatic, concentrated must. After settling, this is then transferred to 225l French oak barrels for alcoholic and malolactic fermentation. Patiently aged on the fine lees and stirred regularly, it is racked only the following spring for bottling on the estate.
Out of eight 225l barrels, with my friend and œnologist Denis Moreau I have selected the four best to offer you what I believe to be my finest Chardonnay. It expresses all the richness and elegance of this great terroir of Limoux. Produced at the junction of the Atlantic and Mediterranean climates, here the Chardonnay expresses its typical flavours, highlighted by superb freshness and a sophisticated hint of oak.
